The Hypogean Oil Mill of Anfiano is an ancient "trappeto" carved into the rock, located near the remains of the Masseria Anfiano in the area between Cannole, immersed in a rural setting of great historical and landscape interest. It stands in the area of an ancient medieval farmhouse of Byzantine origin.
It was part of the economic activities of the nearby masseria, used for grinding olives for oil production.
It presents itself as a small structure: a linear staircase carved into the rock, with olive storage areas (the sciave) on either side, leads into the main room: here a millstone has been reconstructed. Around this room, on the right, is the area for the fire and a bed carved into the rock for the workers to rest. Beyond the millstone were the presses, and on the left side of the entrance, there is a small room that houses a well.
