The ice houses of Torcito hold a fascinating chapter of rural life in Salento: the preservation of cold, before the invention of the refrigerator. Here, there are two structures, one large and one small, carved into the rock and covered by masonry vaults, to insulate the ice from the heat.

The large ice house, square in shape and about seven meters on each side, collected winter snow from an upper opening, while rainwater from the nearby road was channeled inside through a groove carved in the rock. The small ice house, about two meters deep, was insulated with dry leaves and earth, which ensured low temperature and humidity.

The ice thus preserved fueled a real trade: from 1625 to 1870, a tax on snow was even established. It was used to cool the drinks of wealthier families, but also to treat fevers, abscesses, and bruises — the only remedy against the heat until the early twentieth century.
